Ivan Shishkin is an internationally recognized chef and concept developer with more than 20 years of experience working across gastronomy, science, and entrepreneurship. Trained as a chemist, he brings a rigorous analytical perspective to food — an approach that continues to shape his work today.

With the restaurant Delicatessen in Moscow, founded in 2010, he created a landmark culinary project that was repeatedly listed among the World’s 50 Best Bars and received a Michelin Bib Gourmand in 2021. Over the years, Ivan has initiated and led a wide range of influential ventures in Russia and Ukraine, from fine-dining restaurants and street-food formats to craft spirits and large-scale food service concepts.

He is widely regarded as a mentor to a generation of chefs, particularly, having developed training programs, founded cooking schools, and authored several professional books that bridge culinary practice with applied natural science.

Now based in Hamburg, Ivan brings his experience, international network, and distinctive culinary vision to the development of Lactic Galactic.

Julia Börmann is co-founder of Lactic Galactic and leads the project’s strategic, structural, and financial development. Born in Ukraine and based in Germany for over 35 years, she combines strong intercultural fluency with analytical clarity and a talent for bridging different professional worlds.

Julia has more than 15 years of experience in strategy, investor relations, financing, governance, and stakeholder management within international corporations and complex regulated environments. Her work has included building investor-relations functions, supporting IPO processes, shaping ESG positioning, and structuring large-scale financing and joint-venture projects.

Her core strength lies in turning complexity into clear structures — assessing risks and opportunities and translating them into resilient business models and narratives. At Lactic Galactic, she ensures that a strong idea becomes a robust, scalable company: strategically grounded, financially sound, and clearly communicated.
